Black Bean and Tomato Quinoa

2 tsp grated lime zest
2 tbsp fresh lime juice
2 tbsp unsalted butter, melted and cooled
1 tbsp olive oil
1 tsp sugar
1 cup Quinoa
1 can black beans, rinsed and drained
2 medium diced tomatoes
4 chopped scallions (or green onions)
1/4 cup chopped fresh cilantro

Whisk together lime zest, lime juice, butter, olive oil, sugar, 1/2 tsp salt and dash of pepper in a large bowl. Set aside.
Wash quinoa in 3 changes of cold water, draining in strainer each time.
Cook quinoa in medium pot according to package. Do not overcook. Remove pot from heat and let stand 5 minutes.
Add quinoa to dressing and coat until absorbed. Stir in additional ingredients and salt/pepper to taste.
