2 to 3 large cans of Chicken broth
2 frozen chopped spinach
frozen Italian meatballs
1 large onion, chopped
garlic, minced (at least 5 or 6 cloves, or to taste)
tortellini (the small 3 cheese work best)
note: if using frozen thaw before adding to soup
2 Tbsp. Italian seasoning
Parmesan cheese
Pour broth in a large pot and heat until hot.
Saute onion and garlic until transparent.
Thaw spinach in microwave. Press moisture out and add to onion/garlic, stir and heat.
Heat meatballs per package directions in microwave. Blot off as much grease as possible.
Thaw tortellini if using the frozen kind.
To assemble:
Add onion/garlic/spinach mixture to hot broth and add 2 Tbsp. Italian seasoning
Add meatballs and heat to near boiling, add tortellini. Lower heat and let simmer about 30 minutes. Check to see if tortellini are done..
Ladle up add Parmesan cheese and enjoy!
