Pink Lemonade Cake

Ingredients:

2 boxes of Duncan Hines White Cake mix
2 cups flour
2 cups sugar
1 1/2 tsp salt
1 box(small size-I think it is 4 oz?) lemon pudding(instant-not the kind you have to cook)
1 box strawberry creme pudding

8 egg whites
2 2/3 cups milk (I used skim this time, but usually use whole in most of my cakes...adds a little richer flavor)
4 TBSP vegetable oil
2 cups Strawberry Lemonade yogurt (I found this at target in the single serving yogurts(6 oz)...I used yoplait original...to get 1 cup it took 1 1/2 containers)
4 tsp vanilla flavoring(or vanilla extract or whatever vanilla you have on hand)
a drop or two of pink food coloring (I used Duff Electric Pink found at Michaels...just a drop of that goes a long way) 

Directions:
Put all dry ingredients into your kitchen aide bowl. Mix by hand with a whisk until lumps are broken up and seems to be combined. Put bowl on mixer stand. Add all wet ingredients...it will appear as if it is not going to fit, you might need to use a spatula and mix (just a little) some of the wet into the dry so you don't spill over, but it will all fit as it breaks down. Mix on low for 2 Minutes . Scrape bowl with spatula and fill cupcakes/cake pan. For cupcakes I use an ice cream scoop to fill my cups and I try to fill them 2/3 of the way.
